- 3 cups sushi rice
- 3 1/4 1/4 cups water
- 1/3 cup rice vinegar
- 3 tablespoons sugar
- 1 teaspoon salt
- 10 sheets sheets nori
- 1 medium carrot, julienned
- 1 cucumber, cucumber, julienned
- 1 avocado, avocado, sliced
- 1 bell bell pepper, julienned
- 2 tablespoons soy sauce
- 1 tablespoon pickled ginger, for serving
- 1 tablespoon wasabi, for serving
Instructions
- Rinse the sushi rice under cold water until the water runs clear.
- In a medium saucepan, combine the rice and water. Bring to a boil, then reduce to simmer and cover. Cook for 20 minutes or until the water is absorbed and the rice is tender.
- In a small bowl, mix rice vinegar, sugar, and salt until the sugar is dissolved. Pour this mixture over the cooked rice and gently mix to combine. Allow the rice to cool to room temperature.
- Place a sheet of nori on a bamboo sushi mat. Evenly spread a layer of sushi rice over the nori sheet, leaving about 1 inch at the top edge.
- Arrange a few pieces of carrot, cucumber, avocado, and bell pepper across the center of the rice.
- Starting from the bottom edge, carefully roll the sushi mat to encase the vegetables and form a tight roll. Seal the edge with a little water.
- Use a sharp knife to cut the roll into 6-8 pieces. Serve with soy sauce, pickled ginger, and wasabi.
