- 12 oz pasta of your choice
- 1 cup pumpkin puree
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 2 tablespoons unsalted butter
- 1/4 cup fresh sage leaves
- 2 cloves garlic, minced
- Salt to to taste
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water and drain the rest.
- While the pasta is cooking, heat the olive oil and butter in a large skillet over medium heat.
- Add the sage leaves and cook until crispy, about 2-3 minutes. Remove and set aside on a paper towel.
- In the same skillet, add the minced garlic and cook until fragrant, about 1 minute.
- Stir in the pumpkin puree, heavy cream, and reserved pasta water. Simmer for 3-4 minutes.
