- 2 medium sweet potatoes, peeled and diced

- 1 teaspoon chili powder
- 1/2 teaspoon paprika

- 1 cup corn kernels, fresh or frozen

- For the the dressing:
- 3 tablespoons olive oil
- 2 tablespoons lime juice
- 1 teaspoon honey or maple syrup
- 1/2 teaspoon ground cumin
- Salt and and black pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, toss the diced sweet potatoes with 1 tablespoon olive oil, cumin, chili powder, paprika, salt, and black pepper until evenly coated.
- Spread the sweet potatoes on the prepared baking sheet in a single layer. Roast for 25-30 minutes, or until tender and slightly caramelized, stirring halfway through.
- In a large mixing bowl, combine the roasted sweet potatoes, black beans, corn kernels, red bell pepper, red onion, cilantro, avocado, and lime juice.
