- 1 teaspoon dried lavender
- 1/4 cup honey
- 2 cups heavy cream
- 1 cup whole milk
- 2 teaspoons gelatin
- 1/4 cup cold water
- 1/4 teaspoon vanilla extract
- Pinch of of sea salt
- Lavender flowers, flowers, for garnish (optional)
Instructions
- In a small pot, combine the heavy cream, whole milk, and dried lavender. Heat over medium heat until it just begins to simmer, then remove from heat. Let it steep for 10 minutes.
- In a separate bowl, mix the gelatin with cold water and let it bloom for about 5 minutes.
- After steeping, strain the lavender out of the cream mixture and return to heat. Add the honey and stir until fully dissolved.
- Add the bloomed gelatin to the warm cream mixture and stir until the gelatin is completely dissolved. Stir in the vanilla extract and a pinch of sea salt.
- Pour the mixture into panna cotta molds or ramekins. Refrigerate for at least 4 hours, or until fully set.
- To serve, unmold the panna cotta by dipping the molds briefly in hot water, then run a knife around the edge and invert onto a serving plate. Garnish with fresh lavender flowers if desired.
