- 1 ½ ½ cups ground almonds
- 4 large eggs, separated
- ¾ cup granulated sugar
- ½ cup butter, softened
- 1 teaspoon baking powder
- 1 tablespoon orange blossom water
- 1 teaspoon vanilla extract
- Zest of of 1 orange
- ¼ cup all-purpose flour
- Powdered sugar, sugar, for dusting
Instructions
- Preheat your oven to 350°F (175°C). Grease and line a 9-inch round cake pan with parchment paper.
- In a medium bowl, beat the egg yolks and granulated sugar together until the mixture is pale and creamy.
- Add the softened butter, orange blossom water, and vanilla extract to the egg yolk mixture, and beat until well combined.
- Mix in the ground almonds, baking powder, flour, and orange zest until just combined.
- In a separate bowl, whisk the egg whites until they form stiff peaks.
- Gently fold the egg whites into the almond mixture in three batches, mixing until just combined.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 35-40 minutes, or until a skewer inserted into the center of the cake comes out clean.
