- 1 cup ginger snap cookies, crushed
- 1/4 cup unsalted butter, melted

- Slices of of lime and ginger, for garnish

- In a medium bowl, mix crushed ginger snaps and melted butter until well combined. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
- In a large bowl, beat the softened cream cheese and sugar until smooth and creamy.
- Add the lime zest, lime juice, and vanilla extract to the cream cheese mixture, and beat until well mixed.
- Gently fold in the whipped heavy cream until the filling is smooth and no lumps remain.
