- 1 cup heavy cream
- 3/4 cup granulated sugar
- 5 large egg yolks
- 1/4 cup high-quality extra virgin olive oil

- In a medium saucepan, combine the whole milk, heavy cream, and 1/2 cup of the sugar. Warm over medium heat until the mixture begins to steam, but do not let it boil.
- In a separate bowl, whisk the egg yolks with the remaining sugar until the mixture becomes pale and thick.
- Slowly pour half of the warm milk mixture into the egg yolks, whisking constantly to avoid cooking the eggs.
