- 1 medium green papaya, shredded
- 2 medium tomatoes, chopped
- 2 large garlic cloves
- 1/4 cup green beans, cut into 1-inch pieces
- 2 tablespoons roasted peanuts, crushed
- 2 tablespoons fish sauce

- 1 tablespoon palm sugar
- 2 Thai Thai bird's eye chilies, chopped
- 1/4 cup carrot, shredded
- 2 tablespoons dried shrimp (optional)
Instructions
- Peel and shred the green papaya and carrot. Set aside.
- In a mortar and pestle, pound the garlic and chilies until broken down but not a complete paste.
- Add the chopped tomatoes, green beans, and dried shrimp, if using, to the mortar and lightly crush them to release their juices.
- Add the shredded papaya and carrot to the mortar, followed by the fish sauce, lime juice, and palm sugar. Gently pound and mix to combine all the flavors.
