- 200 grams grams cooked beetroot, pureed
- 200 grams grams dark chocolate, chopped
- 100 grams grams unsalted butter
- 3 large eggs
- 150 grams grams granulated sugar
- 100 grams grams all-purpose flour
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 180°C (350°F) and line a baking tin with parchment paper.
- Melt the chocolate and butter together in a heatproof bowl over a pot of simmering water, stirring occasionally until smooth. Allow to cool slightly.
- In a mixing bowl, whisk together the eggs and sugar until pale and fluffy.
- Fold in the pureed beetroot and vanilla extract into the egg mixture.
- Gradually fold in the melted chocolate and butter mixture until well combined.
