- 1 pound shrimp, peeled and deveined
- 2 cups water
- 1 tablespoon salt
- 1 bay bay leaf
- 2 medium tomatoes, finely chopped
- 1/2 cup ketchup
- 1/4 cup fresh lime juice

- 1/4 cup fresh cilantro, chopped
- 1 jalapeno, jalapeno, finely diced
- 1 avocado, avocado, diced

Instructions
- In a medium saucepan, bring water, salt, and bay leaf to a boil.
- Add shrimp and cook for 2-3 minutes, until they are pink and opaque.
- Drain and chill shrimp immediately in ice water then drain again and set aside.
