- 8 large eggs
- 1/2 cup milk
- 1 cup shredded cheddar cheese
- 1/2 cup chopped bell peppers
- 1/2 cup chopped onions
- 2 tablespoons butter
- 8 flour flour tortillas
- 1 cup enchilada sauce
- 1/4 cup chopped fresh cilantro
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together the eggs, milk, salt, and pepper.
- Heat butter in a large skillet over medium heat, add onions and bell peppers, and sauté until soft, about 5 minutes.
