- 4 slices bread
- 2 large eggs
- 4 slices ham
- 4 slices cheddar cheese
- 2 tablespoons butter
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon mayonnaise
- 1 tablespoon Dijon mustard

- Heat a non-stick skillet over medium heat. Melt a tablespoon of butter in the skillet.
- Crack eggs into the skillet and cook until the whites are set but yolks are still runny, about 2-3 minutes. Season with salt and pepper. Remove eggs from skillet and set aside.
- Spread mayonnaise on one side of each slice of bread. Spread Dijon mustard on the other side of each slice.
- On a mayo-side-down slice of bread, place a slice of cheddar cheese, a slice of ham, an egg, another slice of ham, and another slice of cheddar cheese. Top with another mayo-side-down slice of bread. Repeat for the second sandwich.
- Melt another tablespoon of butter in the skillet. Place sandwiches into the skillet and cook on medium heat until the bread is golden brown and the cheese has melted, about 3-4 minutes per side.
- Remove from the skillet, slice each sandwich in half, and serve warm.
