- 1 tablespoon soy sauce

- 4 slices smoked salmon
- 1/2 cup cucumber, julienned
- 4 sheets sheets nori
Instructions
- Cook the sushi rice according to the package instructions. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Stir this mixture into the cooked rice and let it cool.
- In a bowl, whisk the eggs with soy sauce. Heat vegetable oil in a non-stick skillet over medium heat. Pour in the eggs and scramble until fully cooked. Remove from heat and let it cool slightly.
- Lay a sheet of nori on a bamboo sushi mat or a clean surface. Spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top.
- In the center of the rice, layer the scrambled eggs, avocado slices, smoked salmon, and cucumber.
