- 1 cup rolled oats
- 2 cups water
- 1 tablespoon white miso paste
- 2 large eggs
- 1/2 cup sliced scallions
- 1 teaspoon sesame oil
- 1/4 cup toasted sesame seeds
- 1 tablespoon soy sauce
- 1/4 cup shredded nori
- 1/2 teaspoon red pepper flakes
Instructions
- In a medium saucepan, bring the water to a boil. Add the rolled oats and cook for 5-7 minutes, stirring occasionally, until the oats are soft and creamy.
- In a small bowl, mix the miso paste with a few tablespoons of hot water to dissolve, then stir the miso mixture into the oatmeal.
- Meanwhile, bring a small pot of water to a boil. Carefully lower the eggs into the boiling water and cook for 6-7 minutes for a soft-boiled yolk. Remove the eggs and place them in a bowl of ice water for a couple of minutes to stop the cooking. Peel and set aside.
- Divide the oatmeal between two bowls. Drizzle each bowl with sesame oil and soy sauce.
