- 2 1/4 1/4 cups all-purpose flour
- 2 teaspoons ground ginger
- 1 teaspoon baking soda
- 3/4 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/4 teaspoon salt
- 3/4 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 egg egg
- 1/4 cup molasses
- 2 tablespoons granulated sugar for rolling
Instructions
- Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, ginger, baking soda, cinnamon, cloves, and salt. Set aside.
- In a large bowl, beat the butter and 1 cup of sugar with an electric mixer on medium speed until light and fluffy.
- Add the egg and molasses to the butter mixture, and beat until well combined.
- Gradually add the flour mixture to the butter mixture, beating until just combined.
- Roll the dough into 1-inch balls, and roll each ball in the remaining 2 tablespoons granulated sugar.
- Place the cookies 2 inches apart on the prepared baking sheets.
- Bake for 8-10 minutes, or until the tops are cracked. Let cookies cool on the baking sheets for 2 minutes, then transfer to wire racks to cool completely.
