- 1 cup heavy cream
- 1/2 cup whole milk
- 1/2 cup pumpkin puree
- 1/4 cup granulated sugar
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- 1/8 teaspoon ground ginger
- 1/8 teaspoon ground cloves
- 4 large egg yolks
- 1/4 cup brown sugar
Instructions
- Preheat your oven to 325°F (163°C).
- In a saucepan, heat the cream and milk over medium heat until just simmering. Remove from heat.
- In a mixing bowl, combine the pumpkin puree, granulated sugar, cinnamon, nutmeg, ginger, and cloves. Mix well.
- Whisk the egg yolks in a separate bowl until smooth.
- Gradually whisk the warm cream mixture into the pumpkin mixture. Then, slowly add the mixture to the whisked egg yolks, stirring constantly.
- Strain the mixture through a fine-mesh sieve to ensure a smooth custard.
- Divide the mixture among 4 ramekins.
- Place the ramekins in a baking dish. Pour hot water into the dish until it reaches halfway up the sides of the ramekins.
- Bake for 40-45 minutes, or until the custards are set but still slightly wobbly in the center.
- Remove ramekins from the water and let cool to room temperature, then refrigerate for at least 2 hours or until thoroughly chilled.
- To serve, sprinkle an even layer of brown sugar on top of each custard. Use a kitchen torch to caramelize the sugar until it forms a crisp, golden crust. Let cool slightly before serving.
