- 2 Cornish Cornish game hens
- 2 tablespoons olive oil
- 1 lemon, lemon, halved
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
- 1/2 cup chicken broth
- 1/4 cup white wine (optional)
Instructions
- Preheat oven to 375°F (190°C).
- Rinse the hens under cold water and pat dry with paper towels.
- Rub the hens inside and out with olive oil.
- Squeeze the juice of half the lemon over each hen, then place one lemon half inside the cavity of each hen.
- In a small bowl, combine the garlic, rosemary, thyme, salt, and pepper.
- Rub the herb mixture all over the hens, making sure to get under the skin wherever possible.
- Place the hens breast side up in a roasting pan.
- Pour the chicken broth (and white wine, if using) into the bottom of the pan.
- Roast the hens in the preheated oven for 1 hour to 1 hour 15 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown.
- Let the hens rest for 10 minutes before carving, then serve hot.
