- 1/2 cup all-purpose flour
- 1/2 cup whole milk
- 3 large eggs
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons unsalted butter
- 1 medium red onion, thinly sliced
- 1 tablespoon olive oil
- 1/2 teaspoon sugar
- 1/4 cup crumbled goat cheese
- 1 tablespoon fresh thyme leaves
Instructions
- Preheat the oven to 425°F (220°C).
- In a medium bowl, whisk together flour, milk, eggs, salt, and black pepper until smooth.
- Place a cast-iron skillet in the oven to heat up.
- In a separate skillet, heat olive oil over medium heat. Add the sliced red onion and cook, stirring often, until soft and starting to caramelize, about 10 minutes.
- Sprinkle sugar over the onions and continue to cook for another 5 minutes until deeply caramelized. Set aside.
- Carefully remove the hot cast-iron skillet from the oven and immediately add the butter, swirling to coat the bottom and sides.
- Pour the batter into the hot skillet, then quickly return it to the oven.
- Bake for around 20 minutes until the Dutch baby is puffed and golden brown.
- Remove from the oven and top immediately with the caramelized onions, crumbled goat cheese, and fresh thyme leaves.
