- 24 jumbo jumbo pasta shells
- 2 cups ricotta cheese
- 2 cups spinach, cooked and chopped
- 1/2 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1 large egg
- 2 cloves garlic, minced
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3 cups marinara sauce
- 2 tablespoons fresh basil, chopped (for garnish)
Instructions
- Preheat oven to 375°F (190°C).
- Cook jumbo pasta shells in a large pot of salted boiling water until al dente, according to package instructions. Drain and set aside.
- In a large bowl, mix ricotta cheese, spinach, Parmesan cheese, 1/2 cup mozzarella cheese, egg, garlic, Italian seasoning, salt, and pepper until well combined.
- Spread 1 cup of marinara sauce on the bottom of a large baking dish.
- Fill each cooked pasta shell with the spinach and ricotta mixture and place them in the prepared baking dish.
- Pour the remaining marinara sauce over the stuffed shells and sprinkle with the remaining 1/2 cup of mozzarella cheese.
- Cover the baking dish with aluminum foil and bake for 25 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
- Remove from oven and let cool slightly before serving. Garnish with fresh basil.
