- 1 large red bell pepper, sliced
- 1 large yellow bell pepper, sliced
- 1 medium zucchini, sliced
- 1 medium red onion, sliced

- 8 large flour tortillas
- 1 can (15 oz) black beans, drained and rinsed
- 2 cups shredded Mexican cheese blend
- 2 cups enchilada sauce
- 1/2 cup fresh cilantro, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the bell peppers, zucchini, red onion, olive oil, cumin, smoked paprika, salt, and black pepper. Toss to coat the vegetables evenly.
- Spread the seasoned vegetables on a baking sheet and roast in the preheated oven for 20 minutes, or until tender.
