- 1 cup quinoa
- 2 cups water
- 1 can chickpeas, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1 medium cucumber, diced
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 tablespoon apple cider vinegar
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Rinse quinoa under cold water until the water runs clear.
- In a medium saucepan, bring water to a boil. Add the quinoa, reduce to a simmer, cover, and cook for 15 minutes or until the water is absorbed.
- Remove the quinoa from the heat and let it sit, covered, for 5 minutes. Fluff with a fork and let it cool.
- In a large bowl, combine the cooled quinoa, chickpeas, cherry tomatoes, red onion, parsley, mint, and cucumber.
