- 1/2 red red onion, thinly sliced
- 1/3 cup Kalamata olives
- 1/4 cup feta cheese, crumbled
- 1 tablespoon capers, drained
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 clove garlic, minced
- 1 teaspoon Dijon mustard
- 1/2 teaspoon dried oregano
- Salt and and pepper to taste
Instructions
- Preheat grill to medium-high heat.
- Rub chicken breasts with olive oil, dried oregano, salt, and black pepper.
- Grill chicken for 6-7 minutes each side, or until fully cooked. Let it rest for 5 minutes, then slice into strips.
