- 1 tablespoon olive oil
- 1 pound Italian sausage, casings removed
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 large carrot, diced
- 2 stalks stalks celery, diced
- 4 cups chicken broth
- 1 can (15 oz) diced tomatoes
- 2 cans (15 oz) white beans, drained and rinsed
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups baby spinach, roughly chopped
- 1/4 cup grated Parmesan cheese
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the Italian sausage and cook, breaking it up with a wooden spoon, until browned, about 5-7 minutes.
- Remove the sausage with a slotted spoon and set aside.
- In the same pot, add the onion, garlic, carrot, and celery. Cook until vegetables are softened, about 5 minutes.
