- 1 pound Italian sausage, casings removed
- 2 stalks stalks celery, diced
- 1 can (15 oz) diced tomatoes
- 2 cans (15 oz) white beans, drained and rinsed
- 1/4 teaspoon black pepper
- 2 cups baby spinach, roughly chopped
- 1/4 cup grated Parmesan cheese
Heat the olive oil in a large pot over medium heat.
Add the Italian sausage and cook, breaking it up with a wooden spoon, until browned, about 5-7 minutes.
Remove the sausage with a slotted spoon and set aside.
In the same pot, add the onion, garlic, carrot, and celery. Cook until vegetables are softened, about 5 minutes.
