- 1 tablespoon olive oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 cup red lentils
- 1 large carrot, diced
- 1 medium potato, diced
- 1 teaspoon ground cumin
- 1 teaspoon ground turmeric
- 1/2 teaspoon smoked paprika
- 6 cups vegetable broth
- 1/2 cup coconut milk
- 1 tablespoon lemon juice
- Salt and and pepper to taste
- 2 tablespoons fresh cilantro, chopped
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and cook until softened, about 3-4 minutes.
- Add the minced garlic, ground cumin, ground turmeric, and smoked paprika; cook for another minute until aromatic.
- Stir in the diced carrot and potato, cook for 2 minutes.
- Add the red lentils and vegetable broth, bring to a boil, then reduce to a simmer.
- Cook until the vegetables are tender and the lentils are soft, about 25-30 minutes.
- Stir in the coconut milk and lemon juice, season with salt and pepper to taste.
- Simmer for an additional 5 minutes.
- Remove from heat and serve hot, garnished with fresh cilantro.
