- Salt and and pepper to taste
- 2 tablespoons fresh cilantro, chopped

Cook until the vegetables are tender and the lentils are soft, about 25-30 minutes.
Stir in the coconut milk and lemon juice, season with salt and pepper to taste.
Simmer for an additional 5 minutes.
