- 1 pound beef sirloin, thinly sliced
- 8 cups beef broth
- 2 tablespoons fish sauce
- 1 tablespoon soy sauce
- 1 medium onion, thinly sliced
- 4 ounces ounces rice noodles
- 2 cups bean sprouts
- 1 cup fresh cilantro, chopped
- 1 cup fresh basil, chopped
- 1 cup fresh mint, chopped
- 1 lime, lime, cut into wedges
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 cinnamon cinnamon stick
- 4 star star anise
- 1/2 teaspoon black peppercorns
- salt to to taste
Instructions
- In a large pot, bring the beef broth, ginger, garlic, cinnamon stick, star anise, and black peppercorns to a boil. Simmer for 20 minutes.
- Meanwhile, cook the rice noodles according to package instructions. Drain and set aside.
- Strain the broth, discarding the solids. Return the broth to the pot, and season with fish sauce, soy sauce, and salt to taste.
- Add the thinly sliced beef to the broth and let it cook for about 1-2 minutes, just until the meat is tender.
- In individual bowls, place a portion of cooked noodles and ladle the hot broth and beef over them.
- Top each bowl with fresh bean sprouts, cilantro, basil, mint, and a lime wedge. Serve immediately.
