- 1 pound scallops
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter
- 2 cloves garlic, minced
- 1/4 cup chicken broth
- 2 tablespoons fresh lemon juice
- 1 tablespoon fresh parsley, chopped
Instructions
- Pat the scallops dry with paper towels and season with salt and black pepper.
- Heat the olive oil in a large skillet over medium-high heat.
- Add the scallops to the skillet in a single layer, making sure they are not touching. Sear for about 2-3 minutes on each side until golden brown and cooked through. Remove scallops from the skillet and keep warm.
- In the same skillet, add butter and garlic, cooking until fragrant, about 1 minute.
- Pour in the chicken broth and lemon juice, scraping any browned bits from the bottom of the skillet.
- Simmer the sauce for about 2-3 minutes until slightly thickened.
- Return the scallops to the skillet, spooning sauce over the top, and cook for another minute until heated through.
- Garnish with fresh parsley and serve immediately.
