- 2 tablespoons dried hibiscus flowers
- 1 cup raspberries
- 3 cups water
- 1/2 cup sugar
- 1 tablespoon lemon juice
- 2 tablespoons gelatin powder
Instructions
- In a medium saucepan, bring the water to a boil.
- Add the dried hibiscus flowers and let it steep for about 10 minutes.
- Strain the hibiscus tea into a clean saucepan and discard the flowers.
- Add the raspberries and sugar to the hibiscus tea and bring to a simmer over medium heat.
- Stir occasionally until the raspberries have broken down and the mixture is slightly thickened, about 5 minutes.
- Add the lemon juice and stir to combine.
- Sprinkle the gelatin powder over the mixture and stir constantly until the gelatin is completely dissolved.
- Remove from heat and pour the mixture into a mold or individual serving cups.
- Let it cool to room temperature then refrigerate for at least 4 hours or until set.
- Serve chilled, garnish with fresh raspberries and mint leaves if desired.
