Ingrédients
  

  • 2 tablespoons dried hibiscus flowers
  • 1 cup raspberries
  • 3 cups water
  • 1/2 cup sugar
  • 1 tablespoon lemon juice
  • 2 tablespoons gelatin powder

Instructions
 

  • In a medium saucepan, bring the water to a boil.
  • Add the dried hibiscus flowers and let it steep for about 10 minutes.
  • Strain the hibiscus tea into a clean saucepan and discard the flowers.
  • Add the raspberries and sugar to the hibiscus tea and bring to a simmer over medium heat.
  • Stir occasionally until the raspberries have broken down and the mixture is slightly thickened, about 5 minutes.
  • Add the lemon juice and stir to combine.
  • Sprinkle the gelatin powder over the mixture and stir constantly until the gelatin is completely dissolved.
  • Remove from heat and pour the mixture into a mold or individual serving cups.
  • Let it cool to room temperature then refrigerate for at least 4 hours or until set.
  • Serve chilled, garnish with fresh raspberries and mint leaves if desired.
