- 2 tablespoons dried hibiscus flowers
- 2 tablespoons gelatin powder
In a medium saucepan, bring the water to a boil.
Add the dried hibiscus flowers and let it steep for about 10 minutes.
Strain the hibiscus tea into a clean saucepan and discard the flowers.
Add the raspberries and sugar to the hibiscus tea and bring to a simmer over medium heat.
Stir occasionally until the raspberries have broken down and the mixture is slightly thickened, about 5 minutes.
Add the lemon juice and stir to combine.
Sprinkle the gelatin powder over the mixture and stir constantly until the gelatin is completely dissolved.
Remove from heat and pour the mixture into a mold or individual serving cups.
Let it cool to room temperature then refrigerate for at least 4 hours or until set.
Serve chilled, garnish with fresh raspberries and mint leaves if desired.
