- 2 cups heavy cream
- 1/4 cup honey

- 1/2 teaspoon vanilla extract
- 2 teaspoons gelatin powder
- 3 tablespoons cold water
- Fresh lavender lavender sprigs (for garnish)
Instructions
- In a small saucepan, heat the heavy cream and dried lavender over medium heat until it begins to simmer. Remove from heat and let steep for 10 minutes.
- Strain the cream through a fine sieve to remove the lavender. Return the cream to the saucepan and stir in the honey and sugar. Heat gently until the sugar is dissolved.
