- 2 teaspoons dried lavender
- 1/2 teaspoon vanilla extract
- 2 teaspoons gelatin powder
- Fresh lavender lavender sprigs (for garnish)
In a small saucepan, heat the heavy cream and dried lavender over medium heat until it begins to simmer. Remove from heat and let steep for 10 minutes.
Strain the cream through a fine sieve to remove the lavender. Return the cream to the saucepan and stir in the honey and sugar. Heat gently until the sugar is dissolved.
In a small bowl, sprinkle the gelatin over the cold water and let it stand for 5 minutes to bloom.
Add the bloomed gelatin to the warm cream mixture and stir until completely dissolved.
Stir in the vanilla extract and then divide the mixture evenly among 4 ramekins or glasses.
Refrigerate for at least 4 hours, or until the panna cotta is set.
When ready to serve, run a knife around the edge of each panna cotta and unmold onto a plate, or serve directly in the glasses. Garnish with fresh lavender sprigs.
