- 1 can chickpeas, drained and rinsed
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh cilantro, chopped
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/4 teaspoon ground cayenne pepper
- 1/2 cup breadcrumbs
- 1 large egg
- 2 tablespoons olive oil
- 1/2 cup Greek yogurt
- 1/4 cucumber, cucumber, grated and excess water squeezed out
- 1 tablespoon lemon juice
- 1 tablespoon fresh dill, chopped
- Salt and and pepper to taste
Instructions
- In a food processor, combine chickpeas, garlic, parsley, cilantro, cumin, coriander, and cayenne pepper. Pulse until mixed but slightly coarse.
- Transfer mixture to a bowl and add breadcrumbs and egg. Stir until well combined.
- Form the mixture into small patties or balls.
- Heat olive oil in a skillet over medium heat. Cook the falafel patties until golden brown, about 3-4 minutes per side.
- Meanwhile, prepare the tzatziki sauce by mixing Greek yogurt, cucumber, lemon juice, dill, salt, and pepper in a separate bowl.
- Serve the falafel warm with a side of tzatziki sauce.
