Ingrédients
  

  • 1 can chickpeas, drained and rinsed
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon ground cayenne pepper
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 2 tablespoons olive oil
  • 1/2 cup Greek yogurt
  • 1/4 cucumber, cucumber, grated and excess water squeezed out
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill, chopped
  • Salt and and pepper to taste

Instructions
 

  • In a food processor, combine chickpeas, garlic, parsley, cilantro, cumin, coriander, and cayenne pepper. Pulse until mixed but slightly coarse.
  • Transfer mixture to a bowl and add breadcrumbs and egg. Stir until well combined.
  • Form the mixture into small patties or balls.
  • Heat olive oil in a skillet over medium heat. Cook the falafel patties until golden brown, about 3-4 minutes per side.
  • Meanwhile, prepare the tzatziki sauce by mixing Greek yogurt, cucumber, lemon juice, dill, salt, and pepper in a separate bowl.
  • Serve the falafel warm with a side of tzatziki sauce.
