- 1 cup cooked rice
- 200 grams grams tofu, cubed
- 2 tablespoons vegetable oil, divided
- 1 cup kimchi, chopped
- 2 tablespoons kimchi juice
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 2 large eggs
- 2 green green onions, finely sliced
- 1 teaspoon sesame seeds
Instructions
- Heat 1 tablespoon of vegetable oil in a non-stick skillet over medium heat.
- Add the cubed tofu and cook, flipping occasionally, until all sides are golden and crispy, about 8-10 minutes. Remove tofu and set aside.
- In the same skillet, add the remaining vegetable oil and add the chopped kimchi. Stir-fry for 2-3 minutes until fragrant.
- Add cooked rice to the skillet and break it up, mixing well with the kimchi.
- Pour in the kimchi juice, soy sauce, and sesame oil. Stir to combine and heat through, about 3-4 minutes.
- Push the rice to one side of the skillet and crack the eggs into the empty side. Scramble the eggs until just set, then mix into the rice.
- Add the cooked tofu back to the skillet and gently mix to combine all ingredients.
