- 200 grams grams tofu, cubed
- 2 tablespoons vegetable oil, divided
- 2 tablespoons kimchi juice
- 2 green green onions, finely sliced
Heat 1 tablespoon of vegetable oil in a non-stick skillet over medium heat.
Add the cubed tofu and cook, flipping occasionally, until all sides are golden and crispy, about 8-10 minutes. Remove tofu and set aside.
In the same skillet, add the remaining vegetable oil and add the chopped kimchi. Stir-fry for 2-3 minutes until fragrant.
Add cooked rice to the skillet and break it up, mixing well with the kimchi.
Pour in the kimchi juice, soy sauce, and sesame oil. Stir to combine and heat through, about 3-4 minutes.
Push the rice to one side of the skillet and crack the eggs into the empty side. Scramble the eggs until just set, then mix into the rice.
Add the cooked tofu back to the skillet and gently mix to combine all ingredients.
Garnish with green onions and sesame seeds before serving.
