- 8 ounces ounces halloumi cheese, cut into cubes
- 2 tablespoons olive oil
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1 lemon, lemon, juiced
- 12 cherry cherry tomatoes
- 1 bell bell pepper, cut into chunks
- 1 small small red onion, cut into chunks
- Salt and and pepper to taste
- Fresh parsley, parsley, chopped (for garnish)
- Wooden skewers, skewers, soaked in water for 30 minutes
Instructions
- Preheat the grill to medium-high heat.
- In a bowl, combine olive oil, oregano, thyme, rosemary, lemon juice, salt, and pepper.
- Add the halloumi cheese cubes to the bowl and toss to coat well with the herb mixture.
- Thread the halloumi cubes, cherry tomatoes, bell pepper chunks, and red onion pieces alternately onto the soaked wooden skewers.
- Grill the skewers for about 2-3 minutes on each side, until the halloumi is golden brown and the vegetables are slightly charred.
- Remove from the grill and transfer to a serving platter.
- Garnish with fresh parsley and serve immediately.
