Ingrédients
  

  • 8 ounces ounces halloumi cheese, cut into cubes
  • 2 tablespoons olive oil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1 lemon, lemon, juiced
  • 12 cherry cherry tomatoes
  • 1 bell bell pepper, cut into chunks
  • 1 small small red onion, cut into chunks
  • Salt and and pepper to taste
  • Fresh parsley, parsley, chopped (for garnish)
  • Wooden skewers, skewers, soaked in water for 30 minutes

Instructions
 

  • Preheat the grill to medium-high heat.
  • In a bowl, combine olive oil, oregano, thyme, rosemary, lemon juice, salt, and pepper.
  • Add the halloumi cheese cubes to the bowl and toss to coat well with the herb mixture.
  • Thread the halloumi cubes, cherry tomatoes, bell pepper chunks, and red onion pieces alternately onto the soaked wooden skewers.
  • Grill the skewers for about 2-3 minutes on each side, until the halloumi is golden brown and the vegetables are slightly charred.
  • Remove from the grill and transfer to a serving platter.
  • Garnish with fresh parsley and serve immediately.
