- 6 large eggs
- 1 ripe ripe avocado
- 1 tablespoon lime juice
- 1/4 teaspoon cumin
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon Tabasco sauce
- 1 tablespoon cilantro, finely chopped
- 2 tablespoons red bell pepper, finely chopped
Instructions
- Place eggs in a saucepan and cover with cold water. Bring to a boil over medium-high heat, then remove from heat and let stand in hot water for 12 minutes. Cool eggs under cold running water, peel and halve lengthwise.
- Scoop yolks into a bowl and set whites aside. Mash yolks with avocado, lime juice, cumin, smoked paprika, salt, black pepper, and Tabasco sauce until smooth.
- Spoon or pipe the avocado mixture into egg whites. Sprinkle with cilantro and red bell pepper.
