- 4 large flour tortillas
- 1 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 1/2 cup fresh salsa
- 1 tablespoon olive oil
- 1/4 cup chopped fresh cilantro
- 1 medium jalapeno, sliced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Heat a large skillet over medium heat and add the olive oil.
- Place one tortilla in the skillet and sprinkle half of the cheddar and Monterey Jack cheese evenly over the surface.
- Add half of the salsa, a few jalapeno slices, and some fresh cilantro on top of the cheese.
- Season with salt and pepper.
- Place another tortilla on top and press down gently.
- Cook for 2-3 minutes until the bottom tortilla is golden and the cheese is melting.
- Carefully flip the quesadilla and cook for another 2-3 minutes until the other side is golden and the cheese is fully melted.
- Remove from the skillet, repeat with remaining tortillas and ingredients, then slice and serve hot.
