- 1 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 1/4 cup chopped fresh cilantro
- 1 medium jalapeno, sliced
- 1/4 teaspoon black pepper
Heat a large skillet over medium heat and add the olive oil.
Place one tortilla in the skillet and sprinkle half of the cheddar and Monterey Jack cheese evenly over the surface.
Add half of the salsa, a few jalapeno slices, and some fresh cilantro on top of the cheese.
Season with salt and pepper.
Place another tortilla on top and press down gently.

Carefully flip the quesadilla and cook for another 2-3 minutes until the other side is golden and the cheese is fully melted.
Remove from the skillet, repeat with remaining tortillas and ingredients, then slice and serve hot.
