- 1/2 cup honey
- 1/4 cup coconut oil
- 1/4 cup peanut butter
- 1 teaspoon vanilla extract
- 2 cups rolled oats
- 1/2 cup almonds, chopped
- 1/4 cup chia seeds
- 1/4 cup dried cranberries
- 1/4 cup mini chocolate chips
Instructions
- In a medium saucepan over low heat, combine the honey, coconut oil, and peanut butter. Stir frequently until the mixture is smooth and fully combined.
- Remove the saucepan from heat and add in the vanilla extract. Stir well.
- In a large mixing bowl, combine the rolled oats, chopped almonds, and chia seeds.
- Pour the melted honey mixture over the dry ingredients and stir until everything is well coated.
- Gently fold in the dried cranberries and mini chocolate chips.
- Line an 8x8-inch baking dish with parchment paper. Transfer the mixture to the baking dish, pressing it down firmly to create an even layer.
