- 1 cup cooked quinoa
- 1 can black beans, drained and rinsed
- 1/2 cup breadcrumbs
- 1/4 cup red onion, finely chopped
- 1/4 cup cilantro, chopped
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 egg, egg, beaten
- 2 tablespoons olive oil
- 8 slider slider buns
- 1/2 cup guacamole
- 1/2 cup salsa
Instructions
- In a large bowl, mash the black beans with a fork until mostly smooth.
- Add the cooked quinoa, breadcrumbs, red onion, cilantro, cumin, smoked paprika, garlic powder, salt, and pepper. Mix well.
- Add the beaten egg and mix until the ingredients are well combined.
- Form the mixture into small patties, about 2-3 inches in diameter.
