- 1 lb firm tofu, cubed
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1/4 teaspoon black pepper
- 1 cup edamame, shelled
- 2 cups mixed greens (kale, spinach, arugula)
- 1 carrot, carrot, shredded
- 1 red red bell pepper, sliced
- 1 avocado, avocado, sliced
- 1/4 cup green onion, chopped
- 1 tablespoon sesame seeds
- 1/2 cup quinoa, cooked
- 1/4 cup tahini sauce
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a bowl, toss the tofu cubes with soy sauce, sesame oil, and black pepper until well coated.
- Spread the tofu cubes in a single layer on the prepared baking sheet. Bake for 20-25 minutes, or until golden and crispy, turning halfway through.
- While the tofu is baking, cook the quinoa according to the package instructions.
