- 14 oz firm tofu, pressed and cubed
- 2 tablespoons vegetable oil
- 1/4 cup honey
- 3 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon cornstarch
- 1/4 cup water
- 3 garlic garlic cloves, minced
- 1 teaspoon ginger, grated
- 1 large bell pepper, sliced
- 1 medium carrot, julienned
- 1 cup snap peas
- 2 cups cooked jasmine rice
- 2 sliced sliced green onions
- 1 tablespoon sesame seeds
Instructions
- In a small bowl, mix honey, soy sauce, rice vinegar, and water. In another bowl, dissolve cornstarch with a bit of water and set aside.
- Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add tofu and cook until golden and crispy, about 5-7 minutes. Remove tofu and set aside.
- In the same skillet, add the remaining oil. Add garlic and ginger, sauté for 30 seconds.
- Add bell pepper, carrot, and snap peas. Cook for 3-4 minutes until vegetables are tender-crisp.
- Return tofu to skillet, pour in the honey-soy sauce mixture, and bring to a simmer.
- Stir in the cornstarch mixture to thicken the sauce. Cook for another 1-2 minutes until the sauce coats all ingredients.
- Serve immediately over cooked jasmine rice, topped with sliced green onions and sesame seeds.
