- 2 pounds pounds beef chuck, cut into 2-inch cubes
- 1 cup red wine
- 1 cup beef broth
- 3 large carrots, sliced
- 10 ounce mushrooms, sliced
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 2 bay bay leaves
- 4 slices bacon, chopped
- 2 tablespoons flour
- 1 tablespoon olive oil
- Salt and and pepper to taste
- 1/4 cup fresh parsley, chopped (for garnish)
Instructions
- In a large skillet, heat the olive oil over medium-high heat.
- Add the bacon and cook until crispy. Remove bacon with a slotted spoon and set aside.
- In the same skillet, sear the beef cubes until browned on all sides. Transfer the beef to the slow cooker.
- Add the sliced carrots and chopped onion to the skillet and sauté for about 5 minutes.
- Stir in the minced garlic and tomato paste, cooking for another 2 minutes.
- Sprinkle flour over the vegetables, stirring constantly for another minute until combined.
- Pour in the red wine, scraping up any browned bits from the bottom of the skillet, then transfer everything to the slow cooker.
- Add the mushrooms, beef broth, thyme, and bay leaves to the slow cooker. Season with salt and pepper.
- Cover and cook on low for 8 hours or on high for 4 hours, until the beef is tender.
- Before serving, remove bay leaves. Garnish with crispy bacon and fresh parsley.
