- 2 pounds pounds beef chuck, cut into 2-inch cubes
- 10 ounce mushrooms, sliced
- 2 tablespoons tomato paste
- Salt and and pepper to taste
- 1/4 cup fresh parsley, chopped (for garnish)
In a large skillet, heat the olive oil over medium-high heat.
Add the bacon and cook until crispy. Remove bacon with a slotted spoon and set aside.
In the same skillet, sear the beef cubes until browned on all sides. Transfer the beef to the slow cooker.
Add the sliced carrots and chopped onion to the skillet and sauté for about 5 minutes.
Stir in the minced garlic and tomato paste, cooking for another 2 minutes.
Sprinkle flour over the vegetables, stirring constantly for another minute until combined.

Before serving, remove bay leaves. Garnish with crispy bacon and fresh parsley.
