- 1 packet packet taco seasoning
- 2 cups water
- 1 can black beans, drained and rinsed
- 1 cup corn kernels (fresh or frozen)
- 1/2 cup salsa
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1/4 cup sour cream
- 1/4 cup chopped cilantro
- 1 avocado, avocado, diced
- 1 lime, lime, cut into wedges
Instructions
- Cook rice according to the package instructions with 2 cups of water.
- In a large skillet, cook ground beef over medium heat until browned. Drain any excess fat.
- Add taco seasoning and 1/4 cup water to the skillet with the beef. Cook for 2-3 minutes until well combined.
