Ingrédients
  

  • 1 cup rice
  • 1 lb ground beef
  • 1 packet packet taco seasoning
  • 2 cups water
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels (fresh or frozen)
  • 1/2 cup salsa
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1/4 cup sour cream
  • 1/4 cup chopped cilantro
  • 1 avocado, avocado, diced
  • 1 lime, lime, cut into wedges

Instructions
 

  • Cook rice according to the package instructions with 2 cups of water.
  • In a large skillet, cook ground beef over medium heat until browned. Drain any excess fat.
  • Add taco seasoning and 1/4 cup water to the skillet with the beef. Cook for 2-3 minutes until well combined.
  • In a bowl, layer the cooked rice, seasoned ground beef, black beans, corn, and salsa.
  • Top with shredded cheese, a dollop of sour cream, chopped cilantro, and diced avocado.
  • Serve with lime wedges on the side.
