- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 pound ground turkey
- 1 large red bell pepper, chopped
- 1 large green bell pepper, chopped
- 1 can diced tomatoes (14.5 oz)
- 1 can black beans, drained and rinsed (15 oz)
- 1 can kidney beans, drained and rinsed (15 oz)
- 2 tablespoons tomato paste
- 1 cup chicken broth
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon chipotle powder
- 1/2 cup corn kernels (fresh or frozen)
- 1/4 cup fresh cilantro, chopped (optional)
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the onion and garlic, sauté until fragrant and softened, about 3-4 minutes.
- Add the ground turkey, breaking it apart with a wooden spoon, and cook until browned.
- Stir in red and green bell peppers, cook for another 5 minutes until softened.
- Add diced tomatoes, black beans, kidney beans, tomato paste, and chicken broth. Stir to combine.
- Mix in chili powder, cumin, smoked paprika, oregano, salt, black pepper, and chipotle powder.
- Bring the mixture to a boil, then reduce heat and simmer for 20 minutes.
- Add the corn kernels and cook for another 5 minutes.
- Remove from heat and stir in fresh cilantro, if using.
